I will not normally posting daily or in today's case twice a day but I wanted to finish up a review of today.
My step count is a paltry 4000 but I did do about 40 minutes of gardening (mainly mowing the front and back lawn) and spent a good two and half hours cooking (both the coconut, sweet potato & lemongrass soup from my post earlier today, but also another vegetarian meal of indian sweet potato and dhal "pie" with broccoli.
I forgot to take a photo of the "pie" but the recipe can be found at the BBC Good Food website (http://www.bbcgoodfood.com/recipes/indian-sweet-potato-dhal-pies). To be honest I think creating the "pie" element is a waste of time and you would be better off serving it as curried carrot & lentil with mashed sweet potato rather than putting the mash on top of the carrot and lentil.
The wife and I liked it but the 12yr old was not keen on the mash but did at least like the curried carrot and lentils - one to think about as a curry with rice, or even turn the sweet potato into an Aloo.....
My calorie intake is roughly equivalent to the my alleged calorie burn as despite all the good food I had today, my failing point was having a large of amount of mint choc chip ice cream, which I decided to eat rather than throw out, as I needed the space that the large tub occupied in the freezer.
I am not a fan of throwing food out no matter how unhealthy the food is for you.
So two vegetarian recipes with extra notes will now go into my book of recipes made and liked.
